- 1/4 cup (50g) long grain white rice
- 1 cup (250g) milk of your choice
- 0.7-1 oz (20-30g) protein powder (I used @esncom whey cinnamon cereal)
- 2 tsp sweetener of your choice (if your protein powder isn't already sweetened)
- 1/2 tsp cinnamon
- 1-2 tsp coconut sugar or any other alternative sweetener
- Preparation: Begin by rinsing the rice. In a small pot, heat the milk while stirring constantly. Once it starts to boil, reduce the heat to medium and add the rice. Let this lovely mixture cook for about 15 minutes, giving it a stir every now and then.
- Simmer & Set: After the cooking time, turn off the heat and let it sit for another ten minutes. Then, add the protein powder (and sweetener if needed). If it’s a bit too sticky, feel free to add a touch more milk until it reaches your desired creamy consistency.
- Serve & Sprinkle: Transfer your delicious creation to a bowl. Mix together the cinnamon and coconut sugar, then sprinkle this heavenly blend on top of your rice pudding. Get creative with your toppings—fresh fruits, a berry compote, or any other favorites you fancy! I, for one, topped mine with mini cinnamon rolls. Time to dig in and enjoy this cozy treat! 🤭
