Delicious Apple Caramel Pie

Disney’s Apple Caramel Pie is a must-have for this holiday season, especially during the fall. You’ll adore the sugar cookie base, the apple filling spiced with cinnamon, a delightful crunchy topping, all beautifully coated with caramel.



  • About 16.5 ounces of refrigerated sugar cookie dough (we used Pillsbury)
  • 1/2 cup of flour


  • Approximately 2.5 pounds of apples, peeled, cored, and thinly sliced (Honey Crisp or Granny Smith works great)
  • 1/2 cup of sugar
  • 1/8 cup of flour
  • 1.5 teaspoons of apple pie spice
  • 1.25 cups of caramel topping


  • 1 cup of flour
  • 1/2 cup of packed brown sugar
  • 1/2 cup of sugar
  • 1 teaspoon of vanilla
  • 1.5 teaspoons of apple pie spice
  • 1/2 cup of butter


  1. Preheat your oven to 350 degrees. Lightly grease a 10-inch springform pan or a similar pan with an edge.
  2. Combine the cookie dough and flour in a bowl until well mixed.
  3. Press this mixture into the bottom of the pan, making sure to go up the sides of the pan by about 3/4 inch. Ensure there are no holes in the crust.
  4. In another mixing bowl, toss the apples with sugar, flour, and apple pie spice, then spread this mixture evenly over the prepared crust. Drizzle 3/4 cup of caramel topping over the apples. Cover with aluminum foil and bake for approximately 45 minutes.
  5. While the pie is baking, prepare the topping. Combine flour, brown sugar, sugar, vanilla, and apple pie spice.
  6. Cut in the butter until the mixture forms a wet crumb mixture.
  7. Remove the pie from the oven and take off the foil. Sprinkle the crumb mixture over the warm pie.
  8. Place the pie back in the oven uncovered and continue baking for another 15 to 20 minutes or until the topping is lightly browned.
  9. Let the pie cool, then remove the sides of the springform pan. When ready to serve, slice the pie and drizzle additional caramel topping over each slice.
