Ingredients

  • For the cake:
  • 2 cups all-purpose flour

  • 3/4 cup oil
  • 1/2 cup Greek yogurt
  • 4 eggs
  • 1 cup chopped walnuts
  • 1 and 3/4 cups grated carrots
  • Zest of one orange
  • For the cream:
  • 14 ounces cream cheese
  • 1 cup sour cream
  • 3/4 cup softened butter
  • Zest of one orange
  • 1 and 1/2 cups powdered sugar

Instructions

  1. Begin by preheating your oven to 350°F (175°C) and greasing and lining three 9-inch round cake pans with parchment paper.
  2. In a large mixing bowl, combine the flour, sugar, cinnamon, baking powder, baking soda, and salt.
  3. In another bowl, beat the eggs and sugar until creamy, then add the oil, Greek yogurt, and orange zest. Mix well.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Fold in the grated carrots and chopped walnuts until evenly distributed throughout the batter.
  6. Divide the batter equally among the prepared cake pans and smooth the tops with a spatula.
  7. Bake in the preheated oven for about 35 minutes, or until a toothpick inserted into the center of the cakes comes out clean.
  8. Allow the cakes to cool in the pans for 10 minutes before transferring them to wire racks to cool completely.
  9. While the cakes are cooling, prepare the cream cheese frosting by beating together the softened butter and cream cheese until smooth.
