One should celebrate the celebrations as they fall. And it’s best not to skip any. And because this week is St. Patrick’s Day, we’re putting a little green in a classic: mint! So how about super moist chocolate mint brownies? A moist chocolate cake with subtle mint flavor that melts right in your mouth and tastes like nothing but pure indulgence? Sounds good? Then get the ingredients and get to the oven!
Delicious Chocolate Mint Brownies
- 200 g butter
- 200 g dark chocolate
- 6-8 After Eight mint chocolates
- 200 g sugar
- 1 pinch of salt
- 25 g cocoa
- 50 g flour (note: use almond flour or cornstarch for a gluten-free version)
- 5 eggs size L
- 1 pinch baking powder
For the chocolate mint brownies, preheat the oven to 175 °C top/bottom heat.
Melt butter, sugar, mint chocolate and chocolate and salt slowly in a saucepan over low heat and mix. (Thermomix: Melt all ingredients at 50 g, speed 1).
Add the eggs and mix well. (Thermomix speed 4, 1 minute).
Finally, mix flour, cocoa and baking powder and fold into the chocolate mixture without lumps. Important: Do not mix, just stir the mixture. (Thermomix speed 4, 1 minute).
Pour the dough onto a 30x25cm baking tray and bake for 30 minutes.
Do not bake the mixture completely through, it should remain soft and a little creamy inside.
