INGREDIENTS (7-inch pan):

  • 75g gluten-free oat flour or whole grain rice flour
  • 125g almond meal or hazelnut meal
  • A pinch of sea salt
  • 2 eggs*
  • 60g maple syrup
  • 200g applesauce OR applesauce
  • 1 tsp vanilla extract
  • 1 tsp baking soda + a dash of lemon juice

FOR THE APPLE FILLING:

  • 2 apples
  • 40g raisins
  • 4 dried figs
  • 2 tsp cinnamon

FOR THE CRUMBLE:

  • 50g gluten-free oat flour
  • 25g coconut sugar
  • 25g vegan butter
  • 20g sliced almonds or almond slivers

Replace the eggs with 2 tbsp of ground flaxseed soaked in 60ml lukewarm water + 1 tsp of baking powder.

LET’S GET COOKING! πŸ’« 1️⃣ Preheat the oven to 170Β°C (340Β°F). Line the bottom of the baking pan with parchment paper. 2️⃣ Stir all the cake ingredients together thoroughly and add the dissolved baking soda last. 3️⃣ Cut the apples and figs into small pieces and cook them in a pan with a little butter and the remaining ingredients. 4️⃣ Spread the batter over the bottom of the cake pan. Sprinkle the apple pieces on top. Make the crumble by mixing all the ingredients together and spread it over the cake.
