- 1 1/4 cups almond milk (300ml)
- 2 tablespoons olive oil (30ml)
- 3 tablespoons sugar (45g)
- 1 teaspoon vanilla extract
- 2 1/4 teaspoons instant yeast (7g)
- 3 1/2 cups all-purpose flour (450g)
- Pinch of salt
- 1/2 cup dairy-free butter (100g)
- 1/2 cup coconut sugar (100g)
- 1-2 tablespoons cinnamon
- 1/2 teaspoon allspice
- 1/4 cup sultanas (40g)
- Heat almond milk in a microwave-safe jug for 30 seconds or until lukewarm.
- Add oil, sugar, vanilla, and yeast. Mix and let it bloom for 10 minutes.
- In a large bowl, combine flour and salt. Add the milk mixture and stir until a soft dough forms.
- Turn the dough onto a floured surface and knead for 10-15 minutes.
- Wipe the inside of the dough bowl with oil, shape the dough into a ball, place it back in the bowl, cover with a tea towel, and let it rise in a warm place for 90 minutes.
- Punch the air out, roll the dough into a 35cm x 20cm rectangle.
- Mix butter, sugar, cinnamon, and allspice in a small bowl. Spread the mixture evenly over the dough and top with sultanas.
- Cut the dough into 9 even strips and roll each one individually.
- Grease a square baking dish, place the rolls with even spacing, and let them rise for another 30 minutes in a warm spot.
- Preheat the oven to 325°F, then bake the rolls for 15-20 minutes or until lightly golden.
- Top with a cross using icing of your choice and get ready to enjoy! 🌟
