Lemon Ricotta Pancake


  • 1 egg
  • 70ml buttermilk (or mix regular milk with 2 tbsp lemon juice)
  • 150g ricotta or cottage cheese
  • Juice & zest of 1/2 lemon
  • 1 tbsp sweetener of your choice (I used honey)
  • 100g all-purpose flour
  • 1 tsp baking powder
  • Cooking oil for frying


    Mix all the wet ingredients in a bowl. Add the dry ingredients and stir until the batter is smooth. Let it sit for 5 minutes.
    Heat a non-stick frying pan with a teaspoon of oil over medium-high heat. Pour 1-2 tablespoons of batter onto the pan and cook until golden brown on one side. Flip the pancakes and cook until golden on the other side. Serve with extra ricotta/yogurt, lemon, and maple syrup or honey. Enjoy!
