Marzipan Cake

Ever since I was a little kid, I’ve adored marzipan cake above all else, and let me tell you, this is by far my absolute favorite recipe! 🙂 Check out my story to see that you can also bake it in jars for a great gift idea!

For a 20cm (8-inch) loaf pan Makes 10-12 slices

Ingredients:

  • 10.6 oz (300g) all-purpose flour
  • 5.3 oz (150g) sugar
  • 1 teaspoon baking powder
  • A pinch of salt
  • 1 packet of vanilla sugar
  • 5.3 oz (150g) marzipan raw mass
  • 4.2 oz (120g) soft vegan butter
  • 10.1 fl oz (300ml) plant-based milk
  • A small bottle of bitter almond aroma
  • A small splash of sparkling water
  • 5.3 oz (150g) dark chocolate

Instructions:

  1. Preheat the oven to 356°F (180°C) with both upper and lower heat. Grease the loaf pan or line it with parchment paper.
  2. In a bowl, mix flour, sugar, baking powder, salt, and vanilla sugar.
  3. In another bowl, knead the marzipan with the soft butter, best done with your hands. (It works even better if you grate the marzipan beforehand :)) Now, add the dry ingredients, plant-based milk, bitter almond aroma, and sparkling water alternately and mix as briefly as possible with a hand mixer.
  4. Pour the batter into the prepared loaf pan, smooth it out, and bake it in the oven for 45–50 minutes. Remove it from the oven and let the cake cool thoroughly.
  5. Chop the dark chocolate, place it in a heat-resistant bowl, and melt it in a warm water bath. Remove the bowl from the water bath.
  6. Remove the cake from the pan and place it on a cooling rack. Spread the melted chocolate over the cake. Then, take the cake off the rack and place it on a sheet of parchment paper. Let the chocolate set. Enjoy!
