Okay, maybe not everything, but these mini beignets are incredibly cute and an absolute blast to eat, especially when you pair them with an easy 2-ingredient chocolate ganache dip.

Here’s what you need:

  • For Mini Beignets:
    • 2 3/4 cups (370g) all-purpose flour
    • 2 teaspoons baking powder
    • 1/2 teaspoon salt
    • 1 tablespoon cinnamon
    • 1/4 cup (60g) caster sugar
    • 1 egg
    • 1 tablespoon vanilla extract
    • 1 cup (230ml) buttermilk
  • For Chocolate Ganache Dip:
    • 3.5 ounces (100g) dark or milk chocolate
    • 1/4 cup (50ml) double cream

Here’s how to whip up these delicious treats:

Mini Beignets:

  1. In a bowl, combine 2 3/4 cups of all-purpose flour, 2 teaspoons of baking powder, 1/2 teaspoon of salt, 1 tablespoon of cinnamon, and 1/4 cup of caster sugar. Mix everything together using a whisk until well combined.
  2. In a separate bowl, add 1 egg, 1 tablespoon of vanilla extract, and 1 cup of buttermilk. Whisk until the ingredients are well combined, then pour this into the bowl with the dry ingredients.
  3. Stir everything together with a spoon until the dough begins to come together. Then, knead it on a floured counter until the dough is smooth.
  4. Wrap the dough in cling film and let it rest for 10 minutes; this will make it easier to roll out.
  5. Roll the dough into a large rectangle, maintaining a thickness of approximately 1cm-1.5cm.
  6. Cut the dough into small rectangles (or squares) and deep fry each side for 1-2 minutes.
  7. Dust with icing sugar and set them aside while you prepare the chocolate ganache dip.

Chocolate Ganache Dip:

  1. Melt the chocolate in the microwave, heating it in 10-second intervals. Stir in the cream until it’s well combined.
