Cookie Dough:

  • 1 stick (1/2 cup) melted butter
  • 1 cup brown sugar
  • 1 egg
  • 1 1/2 tsp vanilla extract
  • 1 1/3 cup all-purpose flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1 tsp cinnamon

Peaches:

  • 3 peaches, diced
  • 1/4 cup brown sugar
  • 1 tsp cinnamon
  • 1 tsp vanilla extract

Crumble:

  • 1/4 cup brown sugar
  • 3 tbsp all-purpose flour
  • 4 tbsp melted butter

Drizzle:

  • 1/2 cup powdered sugar
  • 3-4 tbsp milk or heavy cream
  • Combine in a small bowl

Instructions:

  1. Preheat the oven to 350 degrees F. Grease a muffin pan. Make 6 jumbo cups or 12 smaller cups.
  2. Whisk together brown sugar and melted butter. Add egg and vanilla extract.
  3. Combine dry ingredients in a bowl and fold into the wet mixture.
  4. Scoop cookie dough into the muffin pan, press down to create a cavity. Bake for 12-15 minutes until golden brown. Remove from the oven to cool and prepare peaches + crumble. Don’t worry if you need to press down the center again when taking the cookie cups out!
  5. In a saucepan, simmer peaches, brown sugar, cinnamon, and vanilla extract, stirring frequently until it thickens and softens (about 5 minutes).
