Ingredients

  • 500 g puff pastry
  • Filling:
  • 400 g fresh or frozen cherries
  • 80 g sugar, adjust to taste depending on cherry sweetness
  • 1 packet vanilla sugar
  • 2 tablespoons cornstarch
  • about 50 ml water
  • Additional:
  • 1 egg for brushing
  • powdered sugar for dusting

Instructions

    Heat the cherries, sugar, and vanilla sugar until they simmer (heating them releases their juices). Mix cornstarch with water. Once the cherries simmer, add the prepared cornstarch mixture and cook, stirring constantly until thickened. Let the filling cool (it doesn't need to be completely cold, just lukewarm).
    Roll out one part of the puff pastry (250 g) to approximately 36×30 cm and cut it into 9 equal pieces (mine were about 12x10 cm each). Spoon about a teaspoon of filling onto half of each cut piece. Fold the top half of the pastry over the filling and press the edges with a fork, then trim with a knife if desired (optional for a neater appearance). Repeat with the remaining puff pastry.
    Arrange the finished pastries on a baking sheet lined with parchment paper, brush with egg, and prick with a fork or make small cuts with a knife.
    Bake in a preheated oven at 220°C for about 20 minutes, or until golden brown.
    Sprinkle with powdered sugar and serve.
