Make these delightful, chocolatey cakes with a gooey center in just 20 minutes with only 8 ingredients!
- 1/4 cup butter (56g)
- 100g chopped semi-sweet chocolate
- 1 large egg
- 1-2 tbsp granulated sugar (based on preferred sweetness)
- Pinch of salt
- 1/4 tsp vanilla extract
- 2 tbsp all-purpose flour
- 1-2 tsp red gel food coloring
- Butter to coat the ramekins
- Preheat your oven to 450°F (conventional) and generously brush the inside of two 6 oz ramekins with butter.
- In a heat-safe bowl, combine chocolate and butter, microwaving in 20-second bursts until melted. Stir to combine.
- In a separate bowl, mix the egg, sugar, salt, and vanilla with an electric hand mixer for about 2-3 minutes until the mixture is light, frothy, and almost triple in volume.
- Gently pour the melted chocolate into the egg mixture, whisking until just combined.
- Sift in the flour and use a rubber spatula to gently fold it in, being careful not to overmix.
- Add the red food coloring, folding gently to adjust the intensity of the color to your liking.
- Divide the batter between the ramekins. Bake for about 10-11 minutes until the edges are set but the center remains molten (you'll see a slight wobble).
- Let the cakes cool in the ramekins for 1-2 minutes, then carefully turn them out onto your dessert plates. Sprinkle with powdered sugar and serve them up!
