Ingredients

  • Dough ingredients:
  • 2/3 cup whole milk (160g)
  • 1/4 cup sugar (50g)
  • 2 teaspoons active dry yeast
  • 2 1/2 cups all-purpose flour (325g)
  • 1 large egg
  • 1 teaspoon salt
  • 1/4 cup softened unsalted butter (60g)
  • Filling ingredients:
  • 1/4 cup softened unsalted butter (56g)
  • 1/2 cup packed light brown sugar (100g)
  • 1 tablespoon cinnamon
  • 1/2 teaspoon salt
  • 1/4 cup heavy cream (60g) for soaking rolls
  • Frosting ingredients:
  • 4 oz cream cheese, room temperature (113g)
  • 3 tablespoons unsalted butter (35g)
  • 2 tablespoons heavy cream
  • 1/2 cup powdered sugar (~60g)

Instructions

  1. Warm the milk in the microwave for about 20-30 seconds until it's comfortably warm. Add it to a bowl with the yeast, whisk together, and let it rest for 10 minutes until it turns foamy.
  2. Combine the rest of the dough ingredients in the same bowl. Use a large wooden spoon to mix everything into a dough.
  3. Sprinkle some flour on a clean work surface. Transfer the dough onto it and knead for 8-10 minutes until it's smooth and stretchy.
  4. Place the dough in an oiled bowl, cover it with cling wrap, and let it rise in a warm spot for 60-90 minutes until it doubles in size.
  5. While waiting, mix softened butter with cinnamon, sugar, and salt for the filling.
  6. Once the dough rises, roll it into a 12x14" rectangle on a floured surface. Spread the filling evenly on the rectangle.
  7. Cut the dough into 6 strips, then roll each strip into a cinnamon roll and place them on a baking pan lined with parchment paper.
  8. Let the rolls rest in a warm spot for another 30-45 minutes until they rise slightly.
  9. Preheat your oven to 375F (conventional) in the last 20 minutes of waiting. Before baking, pour the heavy cream over the rolls.
  10. Bake for 20-25 minutes until they turn lightly golden and feel firm.
  11. Make the frosting by whisking all frosting ingredients until smooth. Spread it over the warm rolls.
