Ingredients

  • 4 egg yolks
  • 1/3 cup sugar
  • 1 1/2 cups whole milk
  • 3/4 cup heavy cream
  • 1/4 cup peanut butter
  • Assembly for 8 Snickers Bars:
  • 12 oz milk chocolate
  • 3/4 cup unsalted peanuts
  • Caramel (use your favorite homemade or store-bought caramel)

Instructions

  • In a saucepan, heat the milk and heavy cream until warm.
  • In a bowl, beat the egg yolks with the sugar until well combined.
  • Slowly add the warm milk mixture to the egg mixture, whisking constantly.
  • Return the mixture to the saucepan and cook over low heat until it reaches 185°F, stirring frequently.
  • Remove from heat and stir in the peanut butter until smooth.
  • Cool the mixture in the refrigerator until it reaches 59°F.
  • Pour the mixture into your ice cream maker and churn according to the manufacturer’s instructions.

    Assembly for 8 Snickers Bars:

  • Melt 8.8 oz of milk chocolate and coat the insides of your molds.
  • Place the molds in the refrigerator for about 10 minutes to let the chocolate harden.
  • Add a layer of caramel, followed by a sprinkle of peanuts, and then a scoop of the prepared peanut butter ice cream.
  • Freeze for at least 4 hours until everything is set.
  • Melt the remaining 3.5 oz of milk chocolate and pour over the top to seal the bars.
  • Return to the freezer for another 30 minutes.
  • Once fully set, unmold your Snickers Ice Cream Bars and enjoy!
