- A pinch of salt
- 200g (1 cup) heavy cream
- 500g (about 2 cups) low-fat quark or curd cheese
- 100g (about 1/2 cup) plain yogurt
- 40g (1/4 cup) sugar
- 1 packet of vanilla sugar (or 1-2 tsp vanilla extract)
- 50g (1/3 cup) bittersweet chocolate shavings
- 400g (about 14 oz) strawberries
- Melt the chocolate and butter in a double boiler.
- Beat the eggs until frothy, then add the sugar.
- Incorporate the melted chocolate and butter into the egg-sugar mixture and mix thoroughly.
- Sift the flour, cocoa, baking powder, and a pinch of salt over the batter and stir until combined.
- Pour the batter into a greased brownie pan and bake for about 40 minutes at 160°C (320°F) with convection.
- Whip the heavy cream until stiff.
- In a separate bowl, mix the quark (curd cheese), yogurt, sugar, and vanilla sugar (or extract).
- Gently fold in the whipped cream and chocolate shavings. Spread this creamy mixture over the cooled brownie.
- Wash and cut the strawberries into small pieces, then scatter them over the cake.
