Strawberry Brownie



  • 300g (10.6 oz) melted bittersweet chocolate
  • 200g (1 1/2 cups) melted butter
  • 5 eggs
  • 200g (1 cup) sugar
  • 170g (1 1/3 cups) all-purpose flour
  • 30g (1/3 cup) cocoa
  • 1 tsp baking powder
  • A pinch of salt


  • 200g (1 cup) heavy cream
  • 500g (about 2 cups) low-fat quark or curd cheese
  • 100g (about 1/2 cup) plain yogurt
  • 40g (1/4 cup) sugar
  • 1 packet of vanilla sugar (or 1-2 tsp vanilla extract)
  • 50g (1/3 cup) bittersweet chocolate shavings
  • 400g (about 14 oz) strawberries
  1. Melt the chocolate and butter in a double boiler.
  2. Beat the eggs until frothy, then add the sugar.
  3. Incorporate the melted chocolate and butter into the egg-sugar mixture and mix thoroughly.
  4. Sift the flour, cocoa, baking powder, and a pinch of salt over the batter and stir until combined.
  5. Pour the batter into a greased brownie pan and bake for about 40 minutes at 160°C (320°F) with convection.
  6. Whip the heavy cream until stiff.
  7. In a separate bowl, mix the quark (curd cheese), yogurt, sugar, and vanilla sugar (or extract).
  8. Gently fold in the whipped cream and chocolate shavings. Spread this creamy mixture over the cooled brownie.
  9. Wash and cut the strawberries into small pieces, then scatter them over the cake.
