Strawberry Shortcake Crunch Bars

Ingredients

  • Cake Bar:
  • 1 box Strawberry cake mix
  • 1 stick unsalted butter, melted (or 1/3 cup vegetable oil)
  • 1 extra large egg
  • 1/2 teaspoon vanilla extract
  • Strawberry Crunch Topping:
  • 25 Golden Vanilla Oreos, crushed
  • 1 box Strawberry Jello Gelatin
  • 1/2 stick unsalted butter, melted
  • Whipped Cream Cheese Layer:
  • 1 package cream cheese (8 oz.)
  • 3/4 cup powdered sugar
  • 1 cup heavy cream
  • 1 teaspoon vanilla extract
  • Optional Strawberry and vanilla Oreos for decoration

Instructions

  1. Preheat the oven to 350 degrees F.
  2. Mix the strawberry cake mix, butter (or oil), egg, and vanilla extract until the dough resembles thick cookie dough. Ignore the instructions on the cake box. Bake for 18-20 minutes.
  3. For the strawberry crumble, combine crushed Oreos, Strawberry Jello powder, and butter in a bowl. Mix until combined. You can crush the Oreos in a blender or use a sealed plastic bag and a rolling pin. Set this mixture aside.
  4. Once the cake is done, let it cool.
  5. While it's cooling, make the whipped cream cheese layer. Soften the cream cheese by beating it for about 2 minutes. Then add powdered sugar, heavy cream, and vanilla extract. Beat for an additional 3-5 minutes until smooth.
  6. Once the cake is cool, spread the whipped cream cheese layer on top. Sprinkle the strawberry crunch topping, and for a finishing touch, add a strawberry and half a vanilla Oreo on top. Ready to enjoy!
