Ingredients

  • 2 1/3 cups flour
  • 1 cup very soft butter
  • 1/2 cup sugar
  • 1 cup almonds, ground and preferably blanched / peeled
  • 1 egg yolk
  • 1 packet of vanilla sugar
  • Additionally:
  • Powdered sugar for rolling or alternatively dusting
  • 1 packet of vanilla sugar for rolling

Instructions

  1. Knead all the dough ingredients together into a smooth dough. Wrap the dough in foil and chill for about 30 minutes.
  2. Preheat the oven to 320°F (or 356°F for conventional oven).
  3. Shape the dough into a roll and cut it into equally sized, bite-sized pieces. If needed, create the rolls on a lightly floured surface. Shape each piece into crescents and place them on a baking sheet lined with parchment paper.
  4. Bake the Vanilla Crescent Cookies for about 10 - 12 minutes. The baking time varies a bit based on the size of your cookies. I prefer not to let the Vanilla Crescent Cookies turn brown, so I take them out quite pale from the oven.
  5. Let the cookies cool completely after baking to ensure they become stable.
  6. Mix some powdered sugar with the vanilla sugar, then roll the Vanilla Crescent Cookies in it. Alternatively, simply dust the crescents with powdered sugar.
  7. Store the Vanilla Crescent Cookies in suitable containers in a cool place.
