Brownie Blueberry Cake

Brownie Blueberry Cake

I have to say, the combination of chocolate and blueberries is truly heavenly and delicious 😍😊

Here’s how to make it:

  • 150g (5.3 ounces) melted dark chocolate
  • 100g (1/2 cup) melted butter
  • 3 eggs
  • 100g (1/2 cup) sugar
  • 80g (2/3 cup) flour
  • 40g (1/3 cup) cocoa
  • 1 tsp baking powder
  • a pinch of salt

  • 1 packet of gelatin
  • 500g (about 2 cups) blueberries
  • 100g (1/2 cup) sugar
  • 600g (2.5 cups) cream cheese
  • 200g (about 1 cup) heavy cream

  • 100g (about 2/3 cup) blueberries
  1. Melt the chocolate and butter in a double boiler.
  2. Beat the eggs with the sugar until creamy.
  3. Add the melted chocolate and butter, and mix everything well.
  4. Sift the flour, cocoa, baking powder, and salt into the mixture and fold them in.
  5. Pour the batter into a greased 26cm (about 10-inch) cake pan and bake for approximately 20 minutes at 160°C (320°F) with convection.
  6. Prepare the gelatin according to the package instructions or let it bloom.
  7. Lightly heat the blueberries and sugar in a pot, then puree them. Stir in the gelatin and let it cool slightly.
  8. Set aside 5 tablespoons of the blueberry mixture for decoration. Mix the rest with the cream cheese.
  9. Whip the cream until stiff and fold it into the cream cheese mixture.
  10. Place a cake ring around the brownie base and spread the cream on top. Chill for at least 2 hours.
  11. Decorate the cake with the reserved blueberry sauce and fresh blueberries.

Enjoy! 😊😍
